Scrapple

Anyone who knew pap or was around him for any length of time knew he loved to make homemade scrapple. I sure remember this. But while I was thinking of him today I realized something. The boys would get out the cast iron kettle, put the fire under it, The water would go in, the hog head and whatever pieces of meat pap would want extra. After all of that had cooked down the grinding of the meat would begin. Umm I beleive that was also one of the boys grinding and one of us girls ( mom , brenda , myself ) or anyone who may have been handy would take the ground meat back to the pot. The whole time pap supervising the whole thing. Then let the stirring begin. You would stir and stir and then stir some more. Everyone would take a turn. Pap would add all the ingredients as the pot was stired. Stirring paddles pap made himself. Then the fun job started ( the tasting) that was paps job. We would keep stirring and he would taste and add more ingredients until it was just the way he liked it. Then the many pans of scrapple would be poured and set on picnic table to cool. My point in this whole story is that pap didn't love making the scrapple so much. What he loved about it was having all his family around doing this together. He could be stern, he could be tough. But no dought he loved his family and like nothing more then to have them all around him. We all loved paps rough edges, he will be missed a great deal. He will always hold a special place in my heart.
